BREAKFAST WITH STRAWBERRY DESSERT
Nothing fancy for breakfast this day - just eating out of the fridge. I picked a few stems of asparagus yesterday and still had some Canadian bacon, so it sounded like scramble time to me. Added some cheddar cheese to the eggs and sided with some leftover seasoned fries (Bev had gone out to dinner with her sis) that I reheated it the toaster oven and of course a few berries to finish it off.
Even the reheated potatoes were good but the berries were the star of the meal. Definately a good way to jump start the energy level before I go plant my maters & peppers (my total garden this year - running about a week late getting them in).

Now that we have fresh, delicious strawberries on hand, it’s time to try out some of your recipes. Because we had the ingredients on hand, we decided to start with this recipe from Lynda at Lynda's Recipe Box
Bev made up the salad ingredients in the proportions that seemed to make sense to us. For the chicken, I cooked up a beer can version on the gas grill. I only had a bottled Guinness on hand, so I rinsed out a coke can, removed the top, and added the beer, rosemary, thyme, parsley, and lemon. I then gave it a good coat of Wolfe Citrus and grilled indirect to an internal temp of 170* in the breast – it turned out great.
I fed the dark meat to Alex and her friend and chunked up the breast for the salad. Bev decided a little fresh grated Parmesan would be good and I agreed. Here’s a pic of mine.
We both really liked it and would definitely make it again but would use more strawberries than we used this time. Thanks Lynda.

Well, YUM! Roast chicken is like catnip to me - irresistable! And I love all the colorful strawberries in the salad.
