Now That's A Sandwich
Yesterday I posted “now that’s a burger” and for dinner tonight it’s another big sandwich. This is called “Eggplant Sandwich with Black Olive Pesto.” The recipe comes from the Food Network. Bev made it from half a loaf of homemade focaccia bread and that’s a full sized cutting board it’s sitting on, an 8” chef’s knife, and a regular sized plate for my serving. It was very, very good, but if we were doing it again, I’d skip the toasting part as the crustiness made the filling squirt out as we ate it. The tomatoes, eggplant and roasted red peppers were from our garden. Here’s the recipe link

I LIKE THE LOOK OF THE SANDWICHES ABOVE AND I'M SURE THE TASTE IS JUST AS GOOD.
