We served BLT’s for lunch when Chris and Alexis came down for our blogger party planning and we had plenty of leftovers. So for supper, we had the very same thing – bacon after all is my favorite meat.

The really good news is we still had leftovers the next morning for breakfast and I had almost the same thing but kicked it up a notch by adding a fried egg topped with the cheese after flipping. The lettuce against each bread slice prevents soggy bread.
All three of the sandwiches were delicious and I could probably eat one everyday.

Hi Larry..Laurie here. Now that looks like a great sandwich! You didn't over do it!...Though I'm still a traditionalist & still prefer a "normal" BLT, this one of yours I would bite into! Plus, how can anyone go wrong with Benton's Bacon!?!

ReplyDeleteMmmm - decently cured streaky bacon, cooked until crisp is a treasured pleasure, and not one I grew up with. It has been such a delight to discover in my "grown up" years.

I have a house full of bacon lovers. I just won't pay the very steep price so they can down several pounds of it at every meal - and I do mean POUNDS!

ReplyDeleteThat breakfast sandwich used to be one of my favorite "after party" meals from the drug store next to my office, back in the day. I call it a fried egg BLT!

Larry, I could eat breakfast for any meal of the day! ANd this is a sandwich that I must make and let you know how it goes. I'd probably let my yolks be a bit runny, did you? Bacon is the bomb....pork rules!
