Bev mentioned she would like to turn some of our tomatoes into a Caprese Salad so I went on line looking for a recipe and found one I liked from Taste Of Home - I picked it because of the vinaigrette. I’ve had the normal version with sliced tomatoes and thought it was just so-so and I had a pile of cherry tomatoes from our very prolific plant so I modified the recipe to get the one below. Caprese Salad - Adapted from Taste Of Home
The Ingredients:
2½ cups cherry tomatoes, halved
¼ cup julienned fresh basil leaves
½ pound fresh mozzarella cheese, diced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
The Directions:
1. Prepare the first three ingredients and add to a bowl.
2. Whisk together the next five ingredients, pour over the
tomato mixture, and gently mix well.
The Verdict:
We all thought it was very good and since everything was
well coated with the vinaigrette, I much preferred it to the normal version and
will definitely make it again soon – have to do something with all those
maters.
We served it with grilled eggplant parmesan using the recipe from Every Last Bite for grilled eggplant then topped them with provolone, Rao’s Marinara, and Parmesan. I hate that I failed to get a shot of my delicious meal.

nice I eat that everyday for lunch once in a while I add the cheese but not very often just tomato and basil for me. Too high in cholesterol but it surely looks delicious

ReplyDeleteWell that sounds like a great dinner. I've been threatening to make eggplant parmesan and will check out that grilled version. And I love the cherry tomato version of caprese. We're just starting to get home grown tomatoes here in Colorado.
