We had two large grilled chicken breast leftover from a previous meal and I decided to turn them into a chicken pepperoni skillet meal using the peppers, onions, pepperoni, cheese and a partial jar of Rao’s Marinara - I had everything on hand. You may recall that chicken pepperoni originated from the Goldie Hawn and Chevy Chase movie entitled “Seems Like Old Times.” We have made the original dish a couple of times and always enjoyed it so I decided to try creating this dish with the following recipe.
Chicken Pepperoni Skillet
The Ingredients:
Two large grilled chicken breast, cut into bite sized
pieces (see note)
½ large onion, chopped
1 green bell pepper, chopped
1 poblano pepper, chopped
5 oz pepperoni, diced
1 tsp minced garlic
Italian seasoning, to taste
1 cup Marinara
Handful of shredded pepper jack
Handful shredded cheddar
S&P to taste.
Note - The chicken breasts had been Jaccarded and marinated
for two hours in Italian salad dressing then grilled to 157F internal temp.
The Directions:
1. With this name, I decided it needed to be cooked in our 10”
cast iron skillet beginning with olive oil, the peppers, onions, garlic,
Italian seasoning, S&P.
2. When they are softened, stir in the chicken and pepperoni
with more seasoning.
3. Stir in the marinara and cover with a lid to warm the chicken
thru.
4. Add the cheeses and return the lid until the cheese is
melted.
The Verdict:
We thought it was delicious and it will be made again when we
have leftover chicken, which we will make happen. I rarely try to create a dish but I am pretty proud of this one.

ReplyDeleteI've never tried the original dish from the movie, but have seen recipes for it. Bob and I both commented last night about how we were craving spaghetti ... I'm liking this idea even more right now because of the no-carb issue, which we've been over indulging with lately. :) Thanks for the step by step instructions. Great post and recipe.
