RV Trip To Roan Mountain - Pizza

Picking back up on our trip to Roan Mountain, when we got back down to the campground from our visit to the rhododendron gardens atop Roan Mountain, it was after seven and we decided not to go far for supper and opted to give Smoky Mountain Bakers a try for their wood fired pizza.  The bakery is in a small building located behind the owners house where they do pizza’s and other baked goods – it actually began more as a bakery then morphed into a bakery/pizzeria.

They cook the pizzas in a small wood fired oven capable of two pies at a time and they were burning hickory and cherry because that’s what the wood guy brought that week.

We checked out the menus stapled to the walls and ordered two 12” pies, the first of which was a “White” which had garlic and herb ricotta, basil pesto, spinach, sausage, and caramelized onions.  The second one was a “Supreme” which was tomato sauce topped with pepperoni, sausage, ham, mushrooms, onions, green peppers, black olives. 

They have a small indoor eating area and a few outdoor picnic tables, next to the garden where they grow as much produce as possible for their baked goods.

It takes 3-4 minutes in the oven and the cooking is done by checking the crust bottom and rotating as necessary and holding the pie near the oven ceiling a few times to cook the top. 

Both pizzas were outstanding and when we went back in to offer our compliments, the owner/ baker was there and we got to chatting, as I often do – big surprise for those of you who know me.  While we were talking one of the other bakery workers (his wife) offered that he was a famous baker and pointed to a book on the table.

As it turned out, his name is Tim Decker and he was a famous baker in Santa Rosa, California.  When I asked him how he ended up in Roan Mountain, TN, it turns out he was born there, moved to California at the age of 9, and after a successful and award winning baking career, decided to return to his roots.  I lost track of the number of great’s, but one of his way-back grandfathers was the first white settler in the area so his roots are very deep.  Tim and wife Crystal, an award winning pastry baker, enjoy the simpler life of growing lots of produce for their pizzas, supplying a wide range of high quality baked goods to their neighbors in a business staffed by the family, and giving back to the community of his birth.

All I can say is you must not be fooled by the easy to miss sign, or the building, or the seating, or the menus, or the wood pile, as this has got to be one of the best kept secrets in that part of the world and a definite visit again next time we’re in the area – it may well be worth an 8 hour day trip just for lunch.

Not only were the pizzas delicious, but so was the Danish we brought back to the RV for dessert and the loaf of chipotle cheddar bread for sandwiches, which will be a future post. While there, Bev ordered a loaf each of chocolate/cherry and sourdough breads for pick up on Friday before heading home and a couple of pizzas for supper that night.

Saturday Humor - Clever Scam


Clever Scam - taking advantage of older men.

Warn your friends....

Women often receive warnings about protecting themselves at the mall and in dark parking lots, etc. This is the first warning I have seen for men. I wanted to pass it on in case you haven't heard about it.

This will only become more commonplace down in Florida this winter.

A 'heads up' for those men who may be regular Lowe's, Home Depot, or Costco customers. This one caught me by surprise.

Over the last month I became a victim of a clever scam while out shopping. Simply going out to get supplies has turned out to be quite traumatic. Don't be naive enough to think it couldn't happen to you or your friends.

Here's how the scam works:

Two seriously good-looking 20-something girls come over to your car as you are packing your shopping into the trunk. They both start wiping your windshield with a rag and Windex, with their breasts almost falling out of their skimpy T-shirts. It is impossible not to look. When you thank them and offer them a tip, they say 'No' and instead ask you for a ride to McDonalds.

You agree and they get into the back seat. On the way, they start undressing. Then one of them climbs over into the front seat and starts crawling all over you, while the other one steals your wallet.

I had my wallet stolen May 4th, 9th, 10th, twice on the 15th, 17th, 20th, 24th, & 29th. Also June 1st & 4th, twice on the 8th, 16th, 23rd, 26th & 28th, three times last Monday and very likely again this upcoming weekend.

So tell your friends to be careful. What a horrible way to take advantage of older men. Warn your friends to be vigilant.

Wal-Mart has wallets on sale for $2.99 each. I found cheaper ones for $1.99 at K- Mart and bought them out. Also, you never will get to eat at McDonalds. I've already lost 11 pounds just running back and forth to Lowe's, Home Depot, and Costco.

The Annual Roden Visit – 2012

Kathy (daughter) and her three girls were in for their annual visit from San Antonio and this was an opportunity for Eric (son) and his two kids to visit with them as well, so they came down from Baltimore.  The grandkids like to play in the lake and go on a picnic to Cades Cove in the Smokies.

Bev had bought them tickets to an amusement place in Pigeon Forge and while they were doing that, we got things ready and headed for the picnic area.  This is our picnic site prior to their arrival – it’s my favorite one.

Our meal consisted of the usual hamburgers and potatoes fried in a cast iron pot along with hot dogs, baked beans, and sliced veggies - potatoes still need to brown a little.

These are half slices from our first “Persimmon” slicing tomato.

This is my plate and I went with a patty melt.

Before and after the meal, there was the usual playing in the creek.

It was another successful visit to “The Cove.”  Then there's always the playing at the lake time and Bev dressed in my favorite outfit.

Summer Flowers - 2012

Thanks to our irrigation system that pumps water from the lake, our plants are not suffering from the drought like so much around us – corn crops are turning brown.  Here are a few shots of Bev’s gardens that are in full summer swing.

We feed the birds sunflower seeds and since I sometimes allow the feeders to go empty, they have taken it upon themselves to sow several around the property, for my lapses, and they are now hanging upside down on them for the harvest – I didn’t have a long enough lens to get a shot of them.

Bev's been picking on this blueberry for a few days now and it's still loaded.

Barbeque Appetizers



HAPPY BIRTHDAY AMERICA

But after Saturday's record high 105*, I've been looking at summer homes in Yellowknife, Canada :-) .  But hey it went way down to 104 the next day.

 We were invited to a local wine tasting group recently and the hostess was serving my pulled pork BBQ on slider buns so I took a couple of appetizers that were BBQ go-withs - ABT’s & Moink balls
 

They seemed to be a big hit and received many positive comments.

Then on BBQ day the next week, Bev requested some wings as an appetizer while our kids were visiting.  I used the sauce recipe from Dennis over at Ask Chef Dennis – check his site for the recipe.  I smoked the wings until they were just done and tossed them with the sauce.  When supper time came, I cooked them on a hot grill to reheat and caramelize the sauce.

Dennis calls them “The Best Buffalo Chicken Wings You’ll Ever Have” and we all seem to agree – this is our second time making them.

Cody

After 16 years of living the good life, Cody had to be put down recently just to put him out of his misery.  Like many pets do, he came to us via one of our kids when Rhett and family were stationed in Germany and could not take a pet, and as things wotked out he stayed for another 13 years. 

In the last six months, he had deteriorated significantly and had gone from 45# to 29# so we finally decided it was time.  While Cody was not one of our four-legged babies, he was a great dog - he was very even tempered with kids and other animals and loved going on his morning walk around the area. Here are a few shots of him.

Chicken Marselena with Pepperoni Ala Dennis

One of my favorite blog reads is “A Culinary Journey With Chef Dennis” as he not only provides great recipes, photos, and stories about his past and current life, he also provides tips on cooking, photography, blogging, etc.  As he is a professional chef, I’m not surprised the he invents dishes such as the one we made recently.

Two of Bev’s favorite dishes are chicken pepperoni and chicken marsala, so when I saw Dennis’ creation combining the two, I knew it had to be made soon.  I followed his recipe as written, using a few additional baby bella shrooms and learned what a beurre manie was.  Please head over to his site for the recipe  and some excellent photos.

But before cooking the main course, we ate the salad course with our dinner guest, good friend Peggy, and it was Bev’s creation for the evening.  She had a cantelope from the store and some fresh picked blueberries that she wanted to use in a salad and after two on line searches, she found the salad recipe at the Cooking Channel site and the vinaigrette at the Fresh Market site.

Melon Salad with Prosciutto and Feta Cheese

4 cups cantaloupe, cut into 1-inch cubes
1/2 cup thinly sliced sweet onion
1/2 cup roughly chopped kalamata olives (pitted)
Handful fresh blueberries
2 ounces prosciutto ham, sliced in ribbons
2 teaspoons chiffonade* basil leaves
2 teaspoons chopped mint leaves
1 cup crumbled feta cheese

Mix all ingredients and toss with enough Balsamic Vinaigrette to coat.

 Balsamic Vinaigrette

1/4 cup balsamic vinegar 
1/4 cup canola oil 
1/4 cup olive oil 
1 tablespoon Dijon mustard
1 tablespoon honey 
1 clove of garlic, minced 
salt and pepper, to taste

In a small mixing bowl, whisk together vinegar, canola oil, olive oil, mustard, honey and garlic. Season with salt and pepper and set aside. Refrigerate until ready to serve.

The salad was pretty good especially considering the diverse ingredients, but the dressing was such a brown color, I took my shots before adding it.  Bev wished she’d used the blueberry vinaigrette she’d seen in the paper that morning.

Now, back to the entrée with a couple of cooking shots - one with a steamed lens.

We all thought it was delicious with a totally unique flavor and definitely a company worthy meal – thanks Dennis for a real winner.
