When I saw this recipe for Machaca Con Huevo (English: shredded beef with eggs) on “the Chef Mimi Blog,” I saw it as something different I could try for breakfast. Chef Mimi used some shredded beef from Amazon but I decided to see if I could make it with locally purchased beef jerky to see how it worked but I could not find any unflavored jerky so I decided the peppered beef might work. I just shredded it in the food processor until I had one cup.
Machaca con Huevo - Adapted from Chef Mimi
Ingredients:
1 tablespoon olive oil
½ cup onion, chopped
2 roma tomatoes, chopped (Larry used grape tomatoes)
1 jalapeño, diced (Larry used mostly sweet and a little
jalapeno)
1 cup carne seca (Larry used shredded jerky)
8 eggs (Larry used 7 jumbo eggs)
2 tbsp cream (added by Larry)
1/4 tsp. K. salt
1/4 tsp Tiger Seasoning (added by Larry)
Shredded cheddar - optional garnish (added by Larry)
Salsa of your choice
Flour tortillas
Instructions:
In a 12" non-stick skillet, sauté onion and peppers in olive oil until onions are translucent.
Add tomato and meat and cook for another 2 to 3 minutes.
Meanwhile, in a medium bowl whisk eggs, cream, and seasonings then add them to skillet and cook until eggs are cooked to your liking.
Taste, adjust seasonings and plate.
Serve with salsa of your choice and flour tortillas. Or add some shredded cheddar.
The Verdict:
I really enjoyed it and think I would have loved it had it not been too peppery so next time I'll order the correct beef from Amazon and maybe add some salsa.
