Cindy has gone to California for a couple of weeks to visit a new great grandson and his big sister.
and before leaving, she left us with three nice sweet peppers.
Pair that with Steph's recent post of the Crack Chicken Stuffed Peppers on her "Plain Chicken" blog and a plan was born. Since I wanted to make them on Friday and knew that snow was likely, I bought the needed ingredients a couple of days earlier. I picked this dish in part due to the simplicity and I followed the recipe but made the ranch dressing from the mix packet - I don’t like any bottled dressing as they all have the same unusual flavor that I believe is likely preservatives.
Crack Chicken
Stuffed Peppers
Ingredients:
2 cups cooked
chopped chicken (Larry used store bought rotisserie chicken)
1 cup cooked chopped
bacon (Larry used 1lb. raw bacon)
1 cup bottled ranch
dressing
1¼ cup shredded
cheddar cheese
4 bell peppers (Larry only had 2½)
Instructions:
Preheat oven to
400ºF.
Cut four large bell peppers in half and carefully remove the membranes and seeds (grapefruit spoon works well). Larry nuked the peppers for a couple of minutes to cook them a little.
Salt the inside of the peppers.
In a large mixing
bowl, stir together shredded chicken, chopped bacon, shredded cheddar cheese,
and Ranch dressing. Spoon the chicken mixture into the bell pepper halves.
Put the peppers on a rimmed baking sheet or in the bottom of a 9×13-inch baking dish.
Cover the pan with aluminum foil and bake in a preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the filling is bubbly and the peppers are tender (Larry cooked them until they were 150F in the center of the chicken).
We sided them with baked russet potatoes and this is my plate.
The Verdict:
The peppers were very good especially for the small effort required and I liked the lack of rice or other fillers. Since I didn't have four peppers, I had extra stuffing which I'm sure we'll find a use for - like this.
With more shredded cheddar added, it made for a delicious cheesy delight.
