Now that we have made it thru the Christmas meal, we have plenty of leftovers to use up up as you will see on my next couple of posts.
Since I didn’t get to eat as much gravy on Christmas Day as I would have liked, the next evening I made an open-faced hot turkey sandwich. I added some gravy and sliced turkey to a bowl and nuked it then built the sandwich as follows: slice of homemade bread, turkey, gravy, and chopped bacon. It was delicious.
We had lots of ham left from Christmas dinner and some asparagus in the freezer so I went in search of a dish that used them both for breakfast and came across this recipe for Cheesy Ham And Asparagus Bake from All Recipes that had a 5-star rating. I followed the recipe except I made it the day before and removed it from the fridge a couple of hours before cooking and it took 45 minutes to cook at 350F.
Cheesy Ham And Asparagus Bake
Ingredients:
1½ cups chopped cooked ham
10 oz package frozen cut asparagus, thawed
½ cup chopped onion
¼ cup chopped red bell pepper
8 eggs
2 cups milk
1 cup all-purpose flour
¼ cup grated Parmesan cheese
¾ tsp dried tarragon
¾ tsp salt
½ tsp black pepper
1 cup shredded Cheddar cheese
Directions:
Preheat the oven to 425 350F and lightly grease a
9x13-inch baking dish.
Combine ham, asparagus, onion, and bell pepper in the
prepared baking dish.
Beat eggs, milk, flour, Parmesan, tarragon, salt, and
pepper together in a large bowl and pour over ham mixture.
Bake in the preheated oven until a knife inserted into the
center comes out clean, about 20 minutes.
Sprinkle top with Cheddar cheese; continue baking until
cheese melted, 3 to 5 minutes.
Let stand 5 to 10 minutes before serving.
The Verdict:
We thought it was good but something unexpected happened with the flour, it sank to the bottom and made somewhat of a crust and I don’t know if it was supposed to do that or it came from sitting overnight. I re-read the recipe and it said it could be made the night before but it didn’t mention the flour settling or a need to give it a stir before baking. The best part is that we can eat on it for a few days.

ReplyDeleteHi Larry, I just love that open face hot turkey sandwich. No turkey at our house this year and the sandwich I had at David II's house wasn't hot or open face. Bummer! You made fine use of that leftover ham, a meal that kept on giving. We had a stack of sliced ham as well and we've been using it where ever we can. Take Care, Big Daddy Dave
