Eliza and family didn’t make it down until Saturday for us to celebrate Christmas with her and for a meal on a rainy day we opted for a soup to use more of the leftover ham from Christmas dinner. After looking around the web, I settled on the recipe for Neighborhood Ham And Bean Soup from Food.com. But before we get to the meal lets have a look at Eliza having her second Christmas with Bev’s help. As a seven year old, she walked in the door, gave me a hug, said Merry Christmas then asked "do you have presents for me." 😊
Neighborhood Ham And Bean Soup
Ingredients:
2 cups dried great northern beans
1 lb. dried navy beans
5 cups chicken broth
3 cups water (add as needed for desired liquid amount)
1 large meaty ham bone (left from Christmas)
2 cups diced ham (left from Christmas)
2 -3 tablespoons chicken bouillon granules
1 teaspoon dried thyme
1⁄2 teaspoon dried marjoram
1⁄2 teaspoon pepper
1⁄4 teaspoon rubbed sage
1⁄4 teaspoon dried savory
1 medium onion, chopped
3 medium carrots, chopped
2 celery ribs, chopped (I also put in a handful of the
chopped celery leaves)
1 large potato, cut into cubes (optional, but very good)
1 tablespoon vegetable oil
Directions:
Cover beans with water and soak overnight.
Add the home bone to a stock pot along with broth, water,
and seasonings; bring to a boil.
Reduce heat; cover and simmer for 2-3 hours.
Remove the ham bone, chop any meat from it and return it to
the broth.
Add the beans and cook two hours.
Sauté’ onions, carrots and celery in oil; add to soup along
with cubed potato, and diced ham. Add
more water as needed.
Cover and simmer 1 hour longer.
The Verdict:
Everyone thought the soup was delicious and the glaze on some of the ham bone cooked in the broth gave it a unique flavor.

ReplyDeleteWe are making this exact same dish today. The only difference is we do not soak the beans. I did not notice if you use the same bean soaking liquid or do you rinse and use fresh water. (water crossed out) I have heard many theories and opinions of 'to soak or not soak' beans.
ReplyDeleteI soak the peas (beans) then cook in fresh water - soaking just speeds up the cooking process.
