Chicken Shepherd’s Pie

Cindy wanted to make this dish and we agreed it would work well for our Friday get together.  She got the recipe for Chicken Shepherd’s Pie from The Kitchen Girl blog and followed it except she increased the ingredients by 50% (shown below) and used corn starch rather than flour for gluten-free. 


Chicken Shepherd’s PieAdapted from The Kitchen Girl

Ingredients:

5 tablespoons Unsalted Butter

1½ diced onion

1½ cup diced celery

1½ large diced carrot

6 cloves Garlic, minced (6 tsp)

2½ tablespoons corn starch

1½ cup Chicken Broth

3/8 cup Half and Half, or milk

1½ teaspoon Fresh Thyme, or ¾ teaspoon Dried Thyme

¾ teaspoon Sea Salt

3/8 teaspoon Black Pepper

1½ cup Peas, fresh or frozen (no need to thaw)

3 cups Cooked Chicken, shredded

7 cups Mashed Potatoes (3½ lbs. raw)

3 ounces Cheddar Cheese, shredded (about ½ cup)

Fresh Parsley, for garnish

Instructions:

1. Preheat oven to 375°F.

2. Heat BUTTER in a 3-quart skillet or sauce pot over medium-high.

3. Add ONION, CARROT, CELERY, and GARLIC; sauté a few minutes until tender, stirring as needed.

4. Add CORN STARCH and continue stirring until vegetables absorb it.

5. Add CHICKEN BROTH and HALF and HALF in small amounts, whisking rapidly until a creamy sauce develops.

6. Remove from heat. Stir in PEAS, SHREDDED CHICKEN, THYME, SALT, and PEPPER and transfer to a 9" x 11" baking dish, spreading evenly.

7. Use a portion scoop or serving spoon to distribute MASHED POTATOES across the surface.

8. Gently spread the potatoes evenly over the surface and sprinkle CHEDDAR CHEESE and PARSLEY.

9. Bake 30 minutes (uncovered) until sauce is bubbling. Carefully remove from oven and allow to set up for 10 minutes. Serve warm

She served it with some Bev-made cucumber salad.

The Verdict:

It was very good but more bland than the beef or lamb versions - I like chicken pot pie topped with biscuits better.  For the future, I believe I’d stick with cottage pie (beef) for this type of dish.

  1. Interesting, I would have never thought of using this since we eat that pie once a year, I always use lamb. It looks good glad you made it first so I wont try it!

  2. Boy I have missed a lot of good food ... and some toe drama. And thanks for the review of this chicken shepherd pie. I thought it sounded like a great idea, but when I take the time to make it, I'll stick with the beef. And now you have me craving chicken pot pie. :)

  3. I've never thought to do a chicken shepherds pie. I'm with you - I love biscuits on chicken pot pie. YUM!
