While picking up the seafood for the cioppino, I noticed some good-looking dressed fresh trout in the case and since this is another fish that Bev won’t eat, even fried, I bought a couple that weighed 10oz. each.
I was invited to daughter, Wende’s, for Thanksgiving dinner
but I really wanted to eat lighter and just hang around the house and relax
from being gone for a week.
Not only do I like fish but I like it for breakfast,
especially cooked outside with some fried potatoes and eggs and I probably
haven’t had it this way since I was a kid.
Since I’m watching my carbs, I passed on the potatoes but I did have
some scrambled eggs with a little cheddar cheese.
As it turned out, the trout was also de-boned so I just ate half of it - 5oz.
My recipe for the fish was about as simple as it gets – S&P the trout skin and flesh, dredge in cornmeal, and fry in oil/butter mixture until golden brown and 130F internal temperature - a couple of minutes per side over medium high heat.
Of course, it would have been better cooked outside over a campfire in a large cast iron skillet with several other filets but it was still delicious with a moist, tender flesh and crispy skin - a great way to begin the day.
For breakfast a couple of days later, I made a first – a filet of
trout omelet. I seasoned the trout with salt,
pepper, Tiger seasoning, lemon and dried dill weed.
I baked it at 400F for 6 minutes.
While it was baking, I cooked three beaten eggs with shredded cheddar on half of it in a 10" non-stick pan.
I plated the eggs, topped with the trout and folded it over.
I had eaten trout baked this same way for Thanksgiving Dinner so out of the two trout, I got three meals for me and a pan fried one for Cindy's BD breakfast before she flew off to Marco to join Bev and Pat.
The Verdict:
I thought both meals were delicious and if you like trout, you should enjoy both dishes – won’t eat fish for breakfast, give them a try for supper perhaps including some fried potatoes and a slice of sour dough toast.

Larry is definitely the best cook for fish which happens to be my first choice anytime. My birthday breakfast melted in my mouth while feeding my body with good stuff:)))

Hi Larry, We just got back from our Thanksgiving family road trip to Omaha and St. Louis so I'm catching up. FYI, I commented on all of your posts since we left but my 'computer security' didn't like your website and it wouldn't let me publish 2 of them...and then I figured out that I had to override the computer block. I enjoyed Rett's breakfast in one of your posts! As for this 'trout' post, both breakfasts look great and you have once again expanded your status as "Breakfast Master"! That omelet looks great! ReplyDeleteI feel as if you were talking directly to me about the breakfast "thing". That omelette looks so good, I might just have to reconsider. I don't buy trout often because of the bones. I'll have to pay more attention, perhaps there are times when it's deboned. Love the cornmeal for breading. I like to prepare okra that way.
