If not “THE”
ultimate breakfast burrito this was at least “AN” ultimate one that Bev whipped up for
us. She had everything on hand and
needed to use it up. I didn’t know what
she was up to, but she was in the kitchen awhile and the whole house smelled
good.
She fried
some breakfast sausage in patties along with some diced onion and sweet pepper,
then removed the sausage and blotted the grease out with paper towels. She crumbled three patties and added them
back to the pan alone with four beaten eggs and scrambled it all together –
wet.
She added
this mixture to two large flour tortillas, rolled them up, topped with homemade
salsa and cheddar cheese and nuked just enough to melt the cheese. Then she topped with tomatoes, lettuce, red
onion, boiled corn, black olives, jalapenos, and sour cream.
