As I mentioned on the blogger brunch post, we had plenty of leftovers and since I had a hard day of gardening facing me, I started it off with a good carb load, as if I needed an excuse. It includes two slices of stuffed fatty, a country ham biscuit, and a biscuit with sausage gravy. Just take two Lipitor and dig in.
I could only eat one piece of the fatty, but it was all still good leftover.
The next day and facing another big day in the garden (trying to get everything wrapped up) I fixed up a good breakfast from leftovers. Have you noticed how I use that garden work to justify these big meals I eat. The first thing I did was mix the potatoes with the peppers and onions as they were served seperately for the brunch. Then I plated them and topped with the bacon - I normally would have chopped the bacon but thought this made for a sexier photo.
I nuked these, toppped with a couple of scrambled eggs and some reheated sausage gravy.
I could only eat 2/3 of it but Bev ate the rest when she got up.
