I try to grow all male asparagus as the seeds from the females quickly get spread around and become weeds. I don’t know if they spread via birds, wind, or something else, but we have a volunteer in one of the flower beds and it apparently is growing pretty shallow. While those in the garden have yet to peak through the ground, this one has warmed up and made this one stalk about the diameter of my middle finger.
So what can I do with just one piece of asparagus, why eat it for breakfast of course. My first plan was an omelet with a piece of toast, but while getting out the ingredients, I spotted a bag of flour tortillas and decided on a breakfast burrito. While searching the fridge, I found green onions, baby bella mushrooms, crisp fried bacon, and cheddar cheese, along with the usual eggs.
I sauteed the veggies in a little olive oil.
Then added the beaten eggs and a little cheese.
I scrambled until the eggs were still wet and added them to the tortilla.
Rolled it up, topped with more cheese, nuked for one minute, then added a little chopped cilantro.
It was delicious but I can’t believe I forgot to include some jalapenos. I need to plan my breakfast the night before, give it careful consideration, and make an ingredients list.
I had some lettuce and brassica plants hardened off and was ready to plant last Friday, but the predictions of severe storms and below freezing temps scared me off. It's looking more promising for early next week.
Of the stuff planted in the garden so far, only the radishes have come up. My tomatoes are about to get their first set of true leaves and will soon be ready for transplanting and cooler temps to prevent legginess.

I have about 10 plants on the side of the house and end up many time with just one stalk. Now I know what to do. I didn't know about the male/female asparagus plants. I don't think I ever see the weeds from seeds. I'll have to pay more attention. Great video
ReplyDeleteI think I must be the only person on earth who does not like asparagus. Even my picky eater loves it!! BUT, I'd still eat that burrito! Love breakfast burritos!!

I never started my asparagus bed last year because the weather was not cooperative. Now I'm envious as heck that you're eating the burrito. Guess I'll have to buy my asparagus again this year. Cute video.

ReplyDeleteThe video is great! We have so many deer here, so tame and just like that one, they must think they're a dog. A huge possum was on our deck at the door the other afternoon and drove the cats in the house crazy. Very strange seeing one in the middle of the day though.
