My mom occasionally made creamed chip beef on toast when I was a kid and Dad always complained because, while serving during WWII, he said they ate it about every day – I can’t recall if he would eat Mom’s or not. But, like most things gravy, I still really enjoy it.
I was watching Diners, Drive-ins, and Dives recently and
one of the restaurants provided a recipe for Creamed Chipped Beef on Toast which included more than the basic ingredients but the recipe didn’t
work well for the home kitchen. So, I
went in search of a recipes that I could adapt and found several very similar
ones so I ended up with the one below which has 50% more meat.
Creamed Chipped Beef on Toast
Ingredients:
3 (2.5oz) jars of dried beef slices rinsed & chopped
4 tbsp butter
4 tbsp flour
¼ t. garlic
powder
¼ t. onion powder
¼ t. dried rosemary
2½ cups milk, room temperature
Sea salt and freshly cracked pepper to taste
Bread, toasted
Parsley for garnish (optional)
Instructions:
1. Separate the beef slices and add to a bowl of water to soak for
a couple of minutes then do it again – this removes some of the salt. Lay out to dry some.
2. Chop the beef into the sizes you like
3. Heat the butter in the large non-stick over medium heat.
4. Add the flour and spices and whisk until well combined and
cooked through.
5. Slowly add the milk and whisk continually.
6. Add the chopped dried beef, bring to a boil and cook until
thickened.
7. Taste and adjust seasonings if needed.
8. Serve over dry toast or upgrade to a biscuit.
We sided it with some broccoli and cauliflower that needed to be used.
Cheesy Broccoli and Cauliflower
Ingredients:
2 large heads broccoli chopped up into florets, about 7
cups
1 large head cauliflower
4 tablespoons butter
4 cloves garlic minced
4 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon pepper
2½ cup
milk
4 cups shredded cheddar cheese
Directions:
1. Steam the broccoli and cauliflower to your desired
doness. Drain and return to the pot with
a cover. Season with S&P.
2. In a large saucepan over medium heat, melt the butter with the garlic.
3. Stir in flour, salt and pepper and mix for 1 minute.
4. Slowly add the milk and whisk until smooth.
5. Add shredded cheese and mix until cheese is completely
melted and creamy, about 3-4 minutes.
6. Pour cheese sauce over veggies and stir to fully coat. Cook for a couple more minutes.

They were both delicious and I liked the extra spices in the gravy and that the veggies were really cheesy. I'll try not to wait so long for my next batch of SOS because it's even better on a biscuit for breakfast.

And to be honest, I had never heard of it until they complained in unison one day. I'm going to make it for them.
ReplyDeleteHi Larry, We've never made creamed chipped beef from scratch but I like the recipe. We usually just buy a family size packet of SOS at the market from Stouffer's. We have SOS probably 6 times a year...one of Laurie's favorites from her childhood. So was enough left over for a breakfast egg? Take Care, Big Daddy Dave

DeleteChipped beef on toast is one of my very favorite comfort foods that my dad would make me when I was a kid. After he passed, I found myself eating it often when I was missing him. Your version looks wonderful & so does the cheesy broccoli & cauliflower. Yum.
