Delicious Home Cooked Pork Rinds And Spring Is Definitely Here

Pork rinds may well be my favorite snack food and I buy the 16 oz container of them from Sam’s for $6.28 and they last me a week or so.  As we’ve gone to various festivals over the years, there is often a vendor selling fried pork rinds and I noticed they use small pieces of pork skins that they had purchased.

I decided that would be the way for me to go so I went to the web looking for them but only found the chips (nuggets) for nuking and I was disappointed as I was sure I wanted to fry mine.  I decided to give them a try anyway and ordered an eight ounce bag of Carolina Gold Nuggets Microwave Pork Rinds from Amazon for $13.95.

I followed the instructions and nuked the first batch for two minutes but they didn’t all puff up so I increased it in 10 seconds increments and settled on 2½ minutes for my microwave which makes them perfect.  This is a quarter cup of chips, put on a paper plate, covered with a paper towel and nuked.



What was I thinking when I wanted to fry them.  These are as good as any I’ve ever eaten, are ready in a couple of minutes, require no salt, and make no mess.  This will be my go-to for the rest of my days and since they have a long shelf life, I ordered three one-pound bags from Amazon at $18.95/ea.  And a bonus is that they take up very little room in the pantry.  If you like pork rinds I think you’ll be happy if you try these.

Nutrition: The 1/4 cup of nuggets weighs an ounce and contains 120 calories, no carbs, 17 grams of protein.

Around The House

The spring bulbs have come and gone but it’s time for the real show at our place beginning with the magnificent snowball – if only it were red or blue.

The 50+ year old Japanese maple is looking good this year but needs a few dead branches cut out.

The Japanese cherry is blooming (left in the distance), the pink dogwood, on the right, is just opening, and the earliest azalea is blooming – we have several in front of the house that will get replaced this year.

The white azaleas are putting on their show with one red one just opening.

This is a shot out the kitchen window - not so good thru the screen but you can still see the colors.  I think the red azalea is about 30 years old.

    1. I don't know but the instructions on the nugget bag say to start at 2 minutes then adjust in 10 second increments.

  3. Japanese Maples are my favorite ever tree. Yours is beautiful, as are the rest of the photos. I must admit, I've never had a pork rind.

  4. Wow! Your yard is so pretty and your Japanese maple is beautiful! I haven't had pork rinds in such a long time and now have a craving. What a cool way to make them and it's great that you don't have to fry them in tons of oil.
