It’s been a while since we had these and about seven years since I posted about them so I thought it was time again here in the middle of tomato season. First, let me say that you are really missing out if you don’t try them as they are roll your eyes back good to us.
Second, we got confused about the recipe and Bev used two biscuits but you should follow the recipe below. Finally, the original recipe comes from the Roseville B&B in Virginia via Taylor Tastes and you can click on the link for set-by-step pics.
Individual Tomato Pies – Adapted
from Taylor Tastes
Ingredients:
10 count inexpensive buttermilk frozen biscuits
1½ cups of grated Monterey Jack/Colby grated cheese
1 cup Real Mayonnaise
Sliced tomatoes for 10 pies
Grated Parmesan cheese
Salad Supreme by McCormick
Butter Pam (or regular)
Dried Basil or Italian Seasoning
Directions:
1. Thaw biscuits.
2. Spray foil lined cookie sheet with Pam. Space biscuits and flatten. Spray biscuits with Pam and sprinkle with
basil (Italian seasoning).
3. Peel and slice tomatoes and place a slice(s) on each
biscuit. Sprinkle tomatoes with Salad
Supreme. Do not be skimpy with spices.
4. Mix Monterey Jack/Colby cheese with mayonnaise. Spread 1 tsp. on top of tomato and sprinkle
heavily with parmesan cheese.
5. Bake at 350 degrees until biscuits are done (about 12
minutes). Do not let the biscuit get too
brown.
Other Variations:
1. Place raw shrimp on top of tomato before baking
2. Place diced bacon on top of tomato
3. Place 2 asparagus spears on top of tomato
4. all of the above can be combined for a special tomato
pie
After many years of hard use, it was time to say good-bye to my old friend, the Stumps Classic Smoker. It had gotten in bad shape on the inside so I didn't get much for it but I'm happy it found a new home.

Larry, We've never had a tomato pie but they sure look good. I'd have to try one with bacon, another with asparagus and a third with bacon and asparagus! Take Care, Big Daddy Dave
