Broccoli Salad Ala Larry

Bev had bought some broccoli salad from the market deli and since I really enjoyed it, I decided to make my own.  The store version appeared to contain broccoli, red onion, shredded cheddar, bacon and mayo plus maybe some sour cream.  As a fan of Mediterranean flavors, I decided to make a Greek version and use my creamy feta dressing for it.

Greek Broccoli Salad

Ingredients:

12 oz. broccoli in bite sized pieces

1/3 C. crumbled feta, more or less to taste

½ C. chopped Vidalia onion

½ C. sliced black olives

½ C. kalamata olives

1 cup halved cherry tomatoes

½ C. chopped sweet red bell pepper

½ C. creamy feta salad dressing 

S&P to taste

Directions:

Prep all of the ingredients –tomatoes were missing for this shot.

Add the broccoli to the mixing bowl, season with S&P and season the other ingredients while in the piles – none for the kalamatas.

Mix everything together and allow the flavors to marry for a couple of hours.  Taste and adjust S&P as needed.

I know – it seems more like a regular salad than a broccoli salad.

We used it as a side for our meal of blackened catfish and boiled corn.



The Verdict:

While it was totally different than the mayo based one from the store, I thought it was very good and if you like feta I think you will as well.

  4. I love your Greek version of a broccoli salad. Feta dressing makes me happy so I know I would love this one. The whole meal looks tasty.
