The Texas Kids Annual Visit – Part 1

After missing last year due to Covid-19, we have all been excited about the annual visit from Kathy and her girls, except this time with a twist – the girls all brought a boyfriend.  When we built our house on the lake, this is exactly what we had in mind and we are thrilled that the grandkids, who are now adults, still want to come visit with us.

Katelyn, the oldest, and her fellow came in on Saturday from a nine person college friends trip to Glacier NP.  For Sat evening we cooked a reverse seared coulette (sirloin cap, picanha) with broccoli casserole and salad.  

I forgot the finished pics but the roast was very tasty and looked just like this.

Then on Sunday we had the same sides to go with grilled pork tenderloin topped with Cherry, Basil Salsa using the recipe from FreshMarket to which Bev added a little mango. The meat and salsa were both delicious – the pork was pulled at 138F and went up to a light pink and juicy 143F.

Next night, it was burritos using the leftover beef and pork.

Since the other five visitors showed up the menu has been.

Spaghetti & meatballs with focaccia bread & salad.

Sausage hashbrown & southwestern grits casseroles then meatloaf ala Katelyn.

Leftover casseroles then chicken & broccoli stir fry ala Lauren.

Eggs then burgers, dogs and fried potatoes cooked crispy in the cast iron pot.


Kinda seems like we are running a restaurant.

This gets us thru Friday and more to come later.

  1. I really love to read your posts and my first big smile was the facts the kids love to visit. I would to with all that 5 star restaurant quality food you cook, this look delicious as always,
