When we still have leftovers in the frig and we’re not sure what else to do, we often reach for the flour tortillas. Around here, almost anything can become something in a tortilla and tonight it was quesadilla’s, made with turkey and dressing. Bev did the cooking and just topped half of a large flour tortilla with turkey, dressing, Guggisberg Swiss and Cabot cheddar cheese, jalapenos, onion, and cilantro, laid it out flat in a dry skillet and cooked until browned. She then folded the tortilla in half (with both top and bottom now browned), plated and topped it with a little sour cream. We also had a couple of avacado’s needing to be used so she made up some guacamole for a side (or topping if you prefer). Here’s my plate.
This was a great way to continue our leftover-a-thon and it was so different, they didn’t seem like leftovers. We’re now down to about one helping of turkey, dressing, and gravy – we had already eaten all of the other leftover sides - and some pumpkin pie.

I am a fan of wrapping up leftovers in a tortilla, and Thanksgiving leftovers seem a natural fit. Looks great! At the rate you're going, though, all the leftovers are going to be gone by the time I'm well enough to come visit!
