Some random meals – Cindy Salmon, Shrimp Omelet, And Pinto Beans

Cindy made a very good Salmon dish recently and I didn’t do a post about it as it required typing in the entire recipe.  The recipe for Salmon With Creamed Spinach & Parmesan Sauce came from Tieghan Gerard in an unknown magazine and it was very good.






Shrimp Omelet

Another recent meal included some Royal Red Shrimp sauteed in brown butter and I turned the leftovers into a shrimp omelet.  I chopped the shrimp and a slice of cooked bacon and nuked them for a minute to warm.  I added them to half of the omelet and creamy white cheddar cheese to the other half, cooked it with a lid on the pan, then plated.



Even though it didn’t flip right, It was very good, especially with the bacon addition.

Pinto Beans Again

I updated this recipe a little and wanted to republish it as these beans may be as good as any I’ve ever had.

Pinto Beans

Ingredients:

2 lb. pinto beans, soaked overnight

1 qt rich country ham broth (or a couple of country ham hocks) See note.

1 cup diced green pepper

1 cup diced onion

1 tsp k. salt + more to taste

1 tsp, pepper

2 tsp. paprika

2 tsp. Tiger Seasoning

2 bay leaves

Water to cover beans by a couple of inches and more as needed

Note:  Like other broth, we make our country ham broth from ham bones from Benton's Country Hams which they have from deboning their hams - they give them away but charge for hocks.

Directions:

1.   Add beans, seasonings, and broth to a large pot, then add enough water to cover by a couple of inches.

2. Bring to a boil then simmer until beans are tender, adding additional water if needed to get the amount of liquid you like.

3. Taste and add salt if needed (depends on amount of salt in the broth or hocks).

4. Serve over good cornbread topped with diced onions and jalapenos or your favorites.

You must try this recipe if you like pinto beans.
