During a recent freezer dive, I discovered a pkg of oxtails in gravy and decided it would be perfect comfort food for a cold Friday get-together meal. I nuked the meat and gravy then served it over mashed potatoes and sided with green beans.
For the potatoes, I did a search for classic mashed potatoes
and opted for the recipe for The Best Mashed Potatoes from the “Spend With Pennies” blog. I
made them ahead of time and kept them warm in the toaster oven.
Mashed Potatoes
Ingredients:
4 pounds russet or Yukon Gold potatoes
3 cloves garlic optional
⅓ cup melted salted butter
1 cup milk or cream (I added more)
salt to taste
black pepper to taste
Instructions:
Peel and quarter potatoes, place in a pot of
cold salted water.
Add cloves of garlic (if using) & bring to
a boil, cook uncovered 15 minutes or until fork-tender. Drain well and return
to hot pan.
Heat milk until warm.
Add butter to the potatoes and begin mashing.
Pour in heated milk a little at a time while
using a potato masher to reach desired consistency.
Season with salt and pepper. Serve hot.
Green Beans
For the green beans, using our neighbor’s recipe, I sauteed
some onion and garlic in a pot, then added a quart of our homemade beef broth
and two packages of frozen green beans, then cooked until tender. I plated them and topped with chopped
bacon. They were very good.
The Verdict:
It was a delicious meal and a great use of the leftover meat.
