Unlike many bloggers who have thousands of readers and scads on commenters, a really big day for me is 200 reads and seven comments and I want to thank all of you for taking the time to read my ramblings and I love getting your comments.
Our cattle raising neighbor recently had one processed for them and I requested some of the bones that normally get tossed so I could make some beef broth. As it turned out we had a little miscommunication and I ended up with at least a cows worth of bones already frozen in six 14”x14”x12” boxes weighing at least 40 lbs. each. Another neighbor agreed to take two boxes but I still had four to deal with. Normally I make a batch of broth using our 16 qt. pan and that makes all we want for a year. So I could put one box in the freezer and I removed the thawed bones from the top of three boxes for broth and put the bags in the freezer.
To make the broth, I used about three fourths of a box of bones and our 20, 16, and 12 qt pots and cooked them for 2 days – this long cook insures the marrow ends up in the broth. Then I strained the broth through a course and fine strainer, let the fat come to the top for removal. Here it is as cooked, strained, and de-fatted.
Then we added the broth to 25 qt. freezer bags and one qt. jar. I didn’t know what I would do with it all but I learned the neighbor who provided the bones uses beef broth and the neighbor who took the extra two boxes said he would make broth for putting on his dogs food – duh, why had I never thought of that.
And we got this nice pile of super tender, flavorful meat that that worked well in vegetable soup.
I thought I was going to have to throw the extra bones away but a friend realized that her Hispanic community friends use lots of beef bones and are having trouble finding them so they came down and took them all – a real win-win.

Homemade broth is the best!!! This just reminded me that my dad used to have a big pot on the stove he would throw bones in from our weekly meals and would make a broth to pour over our dog's food in the winter months. The dogs sure loved it!
