In Sep 2022, I posted about our meal of Pinto Beans and Hoe Cakes but this meal is different in that we used our recipe for Mexican Cornbread for the cakes. Johnny Cakes are made along the eastern seaboard from New England into the Caribbean Islands and are often called Hoe Cakes in the US South. For this meal, I cut our Mexican cornbread recipe in half to get the one below.
MEXICAN CORNBREAD
Ingredients:
1 cup self rising corn meal
mix (White Lilly or Martha White)
2 med eggs, lightly beaten
1/3 cup vegetable oil
1/2 sml onion, finely chopped
1/2 sml green pepper, finely
chopped
1/2 cup cheese, shredded
1/2 cup buttermilk (more or
less for desired consistency)
1/4 tsp baking soda
1/2 ea Jalapeno pepper, seeded
and finely diced
1/2 cup whole kernel corn,
drained
Melted bacon grease
Directions:
1. Preheat griddle then brush on bacon grease.
2. Mix together meal, eggs, oil, soda, and buttermilk.
3. Stir in other ingredients.
4. Pour the cornbread batter onto a fairly hot griddle, cook until side one is done, then flip onto regreased surface and cook until done. I wanted them to be a little crispy on the edges.
We also had a little salad with it.
I had a bit of a snafu with the beans. Bev said she wanted to have extra to make
into refried beans for the freezer so I just got out our bag of beans and
dumped them in our stock pot with water to soak overnight. However, I didn’t notice that it was a four-pound
bag and the next morning, the eight quart pot was pretty full of soaked beans.
So, I just doubled the pinto bean recipe shown in the above link, cooked them in our 16 quart pot, and began to plan for using the beans.
The Verdict:
Cindy said she wasn’t sure she would like this meal (she
wasn’t familiar with a johnny cake) then after eating it she wanted to have it
again the next day. It was a simple and
delicious country meal and the Mexican cornbread worked very well as johnny
cakes and this will be the go-to recipe for the future.

ReplyDeleteLarry, It's been ages since I've had a Johnny Cake in any form... As for your recipe, I'd add the jalapenos and drop the onions. It probably wouldn't matter though as Laurie doesn't like pancakes...and she'd have to be convinced to give Johnny Cake a try. Take Care, Big Daddy Dave
