Salmon Omelet

I had some salmon left from my baked salmon meal the other day and decided to turn it into an easy breakfast.  I looked at our go-to recipe for salmon cakes and used the basic ingredients from it – the fish was already seasoned.  I sautéed some chopped onion and red sweet pepper with about a tbsp. of rough chopped capers until the veggies were about soft.  I than added some chopped salmon and cooked until it was warmed through.  

In the meantime I had three beaten eggs cooking in a covered 10” skillet until the eggs were about set.  Note the bright yellow color from the farm fresh eggs that we're still getting for $2.50/dz - I almost feel like I'm stealing them.




I added the salmon mixture and some shredded cheese, folded it over and plated.


I know I shouldn’t do it but it’s too late to stop now, so the extra salmon on my plate is to slowly give to the pups so I don’t have to listen to their whining while I eat, plus I'm just a big softy.



It was a delicious way to start my day and a great use of the leftover fish.

    But we seldom have leftover fish mainly because I portion our meals.
    Maybe make extra next time.

  5. It looks wonderful, and without the toast is actually relatively low in calories. See there? You're already working on your knee load reduction program (which sounds so much less upsetting than "diet").

  7. Ha! You and Alexis both. Trevor, Brett, and I catch her all of the time feeding stuff to Ramsay and we give her a teasing hard time about it. Thank goodness he's active or all of the pancakes and brisket would make him fat!

  15. Timing is everything! We are having breakfast for dinner tonight....and I just happen to have some leftover salmon! Great idea.
