I hadn't had many opportunities lately to turn leftovers into breakfast, but this one finally came along.
While in Durango, CO during our RV trip, we ate breakfast at Oscar’s cafĂ© and the guys next to us raved about the Verde Breakfast they were eating: "Verde Breakfast - golden hash browns with our famous green chili ladled over, topped with two eggs, and melted cheese served with toast or tortilla."

After
making our first batch of Chili Verde, Bev made a similar dish for me by
reheating some leftover scalloped potatoes, adding warmed chili, and topping
with a fried egg. Since ut was in a bowl, it wouldn’t have made
a very pretty shot but it was delicious.
I
had the same ingredients the next morning, but tried to make it more
photogenic.
It
was delicious and you know I put a fried egg on top, but the photo was a flop.

Recreated left-overs for breakfast is one of our favs. You are the king of turning your left-overs into grand dishes for breakfast Larry. But my Meakin is mighty good at it too :)

ReplyDeleteWe are the hardest critics on ourselves when it comes to photos.. I'm sure it wasn't as bad as you think... but at least I can imagine how wonderful it tasted!!!
ReplyDeleteI bet your breakfast was better than Oscar's Cafe with your chili verde. A couple of fried eggs often tops leftovers on my husband's weekend breakfast.

Larry, Chili verde does not lend itself to an attractive photo! Actually, an egg on top would have added a touch of beauty to the picture... I'm sure it tasted great! Take Care, Big Daddy Dave

ReplyDeleteHI, I say this every time you post a 'leftover' meal--but I still think you should publish some of these. There aren't many cookbooks out there featuring great leftover meals ---and all of us have leftovers!!!! This is another good one. Thanks for sharing.

ReplyDeleteWow--you all got away JUST in time... We have had some VERY VERY cold weather up here. BUT--it is finally warming up!!!!! Feels so much better... We got about 2 inches of snow here --and schools are still out today. There has been LOTS of ice/snow on the backroads....
