Eating Out More, Great Breakfast Leftovers, And RV Cleanout

My desire to cook seems to be waning and both of us have long since pasted the desire to clean up the kitchen so we have decided to eat more meals out and we started with a Sunday visit to the Dockside Grill at Tellico Marina which is less than a 10 minute drive from home.  After a 10am BLT for breakfast, we made it to the restaurant a little before 3pm to find just a small crowd, which was perfect.  This is the view of the main dining area and the harbor from our table with lots of boats going in and out to just look around.  


The ambience is not quite as good as Mudpuppy (below) but still very nice and much better food.

Bev was eating lighter than me and ordered only fried green beans and a side salad (which she brought home).  

Since I specifically chose Dockside so I could get a catfish fix, all I needed to choose was sides and I went with loaded taters tots and potato salad knowing I would only eat half of the meal.  This is my plate with two large fish filets – I can’t believe they sell this meal for $15 - these were not those small foam containers.

As expected, the catfish was lightly breaded and melt in my mouth moist and tender and it definitely provided my fix.  The loaded tots were new to me and I thought they were very good seeming to be topped with chili and cheese and heated from the top.  I took home the even larger piece of fish and the potato salad.

I had a large catfish filet leftover from lunch the other day and of course I made it into breakfast but decided to kick it up a notch.  To reheat and re-crisp, I ran the fish thru a toast cycle in the toaster oven.

Then I added some cheese and chopped bacon then melted the cheese under the broiler.

Finally, I topped it with a sunny side up egg.

Reheating on a 6 minute toast cycle, made the fish breading crispy while only cooking the inside enough to warm it up.  And as expected when topped with cheese, bacon, and an egg, it was pretty awesome.

RV Update

After several hours for Bev, Karen, and me, we got everything out of the RV coach to go with the earlier basement stuff and now it will get a good cleaning but now we have this stuff (plus and island full in the kitchen) to deal with.
