Bacon Cheeseburger Sloppy Joes, RV Update, A Good Laugh

I saw this recipe for Bacon Cheeseburger Sloppy Joes  on Kevin’s “Closet Cooking” blog and decided it would work well for our Friday get-together.  I especially like that it is a one pan meal and know that I always like Kevin’s recipes.  Since the recipe only made four servings, I tripled it to get the recipe below.


Bacon Cheeseburger Sloppy Joes Adapted from Closet Cooking

Ingredients:

1 lb. bacon, sliced into 1-inch pieces

3 lb. ground beef, 93% lean

1 large onion, diced

6 cloves garlic, chopped

3 tbsp. cornstarch

1½ cup beef broth

¾ cup ketchup (or BBQ sauce)

3 tbsp. yellow mustard

3 tsp. Worcestershire sauce

salt and pepper (or steak seasoning) to taste

3 cup Shredded cheddar cheese

Directions:

Cook the bacon in skillet before setting aside and draining off most of the bacon grease from the pan. (I like to cook the bacon very slowly so that it renders the fat and the bacon ends up swimming in the grease and therefore being deep fried for very even cooking).



Add the onions and cook over medium-high heat until softened, remove from the pan and add to the bacon.  Season with S&P.

Add the beef and break it up as it cooks until browned and drain any excess grease from the pan.

Add the garlic and cook for a minute.  Stir the onion back into the beef.


(Larry cooked it to this point earlier in the day and covered with a lid then reheated it to finish cooking)

Add the mixture of the corn starch and broth, followed by the ketchup, mustard, Worcestershire sauce, steak seasoning and cook until the sauce thickens a bit, about 3-5 minutes.

Add the cheese and cook until the cheese melts.

Top the buns with the filling and enjoy.

We offered mustard, dill pickles, shredded cheese, and pickled jalapenos on the side.  

I had mine open faced with everything.

The Verdict:

As expected from a Kevin recipe, the sandwiches were very good – adding bacon and cheese makes about anything better for me.  This may not apply to everyone, but I like that it wasn’t sweet – Bev said it could have used more ketchup (sweet) for her.

The coach basements have been emptied and cleaned and now it’s on to the inside – much of which we’ll let go with the coach.


I don’t know about you, but some hearty laughing always makes me feel better and that’s what I got while watching Down Periscope (staring Kelsey Grammer) recently, even though I’ve seen it at least twice before and knew what was coming – give it a try if you need a laugh.
