We had a good-sized container of steamed broccoli left over from another meal and rather than just reheat it to eat, I went in search of a recipe to use it for breakfast. I found several omelets and frittatas and since I’m a fan of all things Mediterranean, I settled on the recipe for Mediterranean Broccoli & Cheese Omelet from “Taste of Home” magazine. I added some onion, chicken, and cheddar cheese to get the recipe below.
Mediterranean Broccoli & Cheese Omelet – Adapted from Taste Of Home
Ingredients:
1 tablespoon olive oil
½ cup diced onion
2½ cups fresh broccoli florets
1 cup chopped cooked chicken thigh meat (or breasts)
7 extra large eggs
¼ cup 2% milk
½ teaspoon salt
¼ teaspoon pepper
½ tsp Tiger seasoning
1/3 cup grated Romano cheese
½ cup shredded cheddar
1/3 cup sliced pitted Greek olives (I used green and black
olive mix)
1 tsp Greek seasonings for next time
Directions:
1. Chop broccoli florets into fairly small pieces.
2. In a large bowl, whisk eggs, milk, salt and pepper.
3. Stir in cooked broccoli, chicken, cheeses, and olives.
4. In a 10” 12” cast-iron or other ovenproof skillet,
heat oil over medium heat, add olive oil and onions and cook until translucent.
5. Remove onions to a small bowl, cool for a few minutes, then stir into the egg mixture.
6. Pour egg mixture into the pan and cook, uncovered, until
eggs are nearly set, 4-6 minutes. (see verdict below)
Broil 3-4 in. from heat until eggs are completely set, 2-4
minutes.
Let stand 5 minutes, cut into wedges, and serve with some fruit.
The Verdict:
I cooked it in a 10” pan but it was too thick to cook on
the stove top without getting the bottom too brown, so after several minutes there, I
moved it to the oven to finish cooking.
I’ll use a 12” pan next time. Bev
and I both thought it was good but it would have been very good with the
addition of some Mediterranean herbs and spices to kick it up a bit. It was a good use of the broccoli and made
two meals for us.
