Corned Beef Leftovers - Sandwich

As I said on my St. Patrick’s Day post, it’s the things we make with the leftover corned beef that we really like and for supper on Monday, it was an almost-a-Reuban sandwich.  A Reuben is made from corned beef, Swiss cheese, kraut, and Russian dressing on rye bread and grilled but we had no Swiss cheese and opted for pepper jack instead and we used 1000 Island dressing, which is a normal substitution.

The ingredients for our sandwich were:

Corned beef, sliced thin, warmed
Pepper jack cheese, sliced, room temperature
1000 Island Dressing – homemade, room temperature 
Kraut – homemade, warmed 

We’re not big fans of the NY deli versions that pile a half pound of meat in the middle of the bread so it looks impressive when cut in half (photo from the Net),

preferring a thinner layer of meat spread evenly over the bread.  I grilled it with just the meat and cheese so the cheese would have a better chance of melting, then added the kraut and dressing when it came out of the skillet.

I’ve posted about Reuben's and corned beef sandwiches in the past but added this one because of the different cheese.  The pepper jack provided a nice heat, which I really liked, and it may be the standard around here from now on, or maybe Swiss with a little crushed red pepper.

  1. Great looking Reuben. This year I drained the kraut well and added the Russian dressing to it like a slaw and topped the corned beef with this. Nice touch also.

  3. I'm with you on the piled high meat sandwiches.. they do look really good for photos, but man, that's just too much meat! Your sandwich looks absolutely perfect!!!

  4. I'm with you on those too much meat sandwiches. They may look impressive but I like a more even distribution for flavors. We had Reubens two nights. Such delicious sandwiches .... however, reading this post made me realize I forgot the 1000 Island Dressing. Love that you had that homemade sauerkraut for this!

  7. I love Reuben Sandwiches ---and am craving one. Guess I'll have to see about making one soon!!!!! YUM....

  8. I love a good corned beef sandwich. But corned beef always gets scarfed right up, so I have to go out to get one. I'd take yours in a heartbeat.

Larry, I like the idea of pepperjack cheese but for my sandwich I'd skip the Russian or Thousand Island dressing and add a good spicy mustard...and leave it stacked high...but with enough room for some of that kraut! Please note that I have not offended the purists...I am not calling this a Reuben...it's more of a 'Dave'. Take Care, Big Daddy Dave

  14. I'm with you on that Larry! I'm not the biggest fan of corned beef as an entree, but I'll sure take it shredded up and blended in some cabbage or in a hash or slice up for a Reuben. As far as the piled high sammies, I like the fact that it makes you feel like you're getting your money's worth (and in NY that sandwich you picture is probably pretty pricey!!) but I'm not a fan of trying to eat one! When I get that out somewhere, I remove half of meat & take it home in a doggie bag for a sandwich the next day!
