Breakfast Pizza

Bev had bought some Pasta Prima Lobster Ravioli from Costo and for sauce she added some heavy cream to a tomato sauce she had made earlier for pepperoni rolls.  It made a very good sauce for the ravioli, which we also thought were pretty good for out-of-the-package (we'll wait for lobster ravioli connoisseur and friend Laurie to try them and let us know for sure) .  Since Bev had sauce left over, she decided to make a breakfast pizza utilizing some pre-made Mama Mary’s crusts, also from Costo.

For the pizza, she brushed the crust with olive oil and added a shredded Queso Blanco (only white cheese we had), then she added the sauce and toppings of crumbled crispy bacon, sautéed asparagus & onion, soft scrambled eggs, and raw eggs in pockets.  She baked it about 15 minutes then added some more of the cheese and baked until it melted - chopped green onions added prior to serving.

The pizza was very good and the sauce worked well for it.  The only thing that would be different next time is to bake the crust cheese and sauce a little first then add the other ingredients (warm) so the raw eggs are only the oven a few minutes to maintain the runny yolk that I like (these were hard) – or just add the eggs already fried at the end - or use all scrambled (easiest).

  1. Looks like I'm behind in reading your blog. I missed the dock repairs and mind boggling feet trick and arrived just in time for Bev's yummy pizza for breakfast. I'm betting this is Madison's favorite new breakfast item. Hope you all have a great weekend.

  2. Sounds like I've got some new products to search out at Costco. That ravioli sounds good, and the pizza sounds amazing. Love the photo of CoCo being a good friend, and I'm assuming that's Madison.

  8. Oh my goodness Larry! That breakfast pizza looks so good! That is something I never think about is a pizza breakfast style. I know the kids eat something at school that they call breakfast pizza but I have no idea what it is. I know it's not near as good as what you have there though!

    I'm sure Coco is glad to have her girl around. I hope she's doing well with her schooling; she'll be studying out on the dock pretty soon, working on her tan and her math at the same time....

  11. The closest Costco is an hour away but I'll be looking for the lobster ravioli on my next visit. Pizza for breakfast...now that will keep you going for the day. :)

  12. Larry, Now this is a pizza! Leave off the onions and I'd be good to go... We had another disapointing pizza out tonight and I'm about to give up on this food basic here in East Tennessee!     You and Bev are the most creative when it comes to cooking and using all your leftovers. It all sounds good and lobster ravioli sounds wonderful, but I don't believe it's available in our neck of the woods.

  15. This is one that I haven't tried (breakfast pizza), I'll have to try something like that on the weekends. I do think the eggs would be the hardest part to get just right.
