For the
country rib supper, I made plenty of mashed potatoes for leftovers, especially
to use for breakfast. I didn’t mix in
anything else and just formed them into patties and fried in a butter & oil
mixture.
Then came the unique part of this meal - two over easy eggs on top.
It was a
delicious and these potatoes made excellent potato cakes.

Mmmmm. That sounds delicious. My mom used to make us potato cakes. I add a few more ingredients than she did but they are still delicious! I love the egg on top!!

DeleteLarry, This is the way I like my potato cakes! Fried with a bit of pepper and salt...then topped with easy over eggs and Tabasco. The only problem is that my potato cakes never really firm up quite enough to be called 'cakes'. Great breakfast! Take Care, Big Daddy Dave

DeleteUmmm, mmmm! It looks great, Larry! I love potato cakes and could eat them any time of the day. I usually mix in a couple of eggs with the potatoes before frying. Next time will be your way! Just wondering, is there anything you don't like with eggs on top? :-)

DeleteThese look great. I am loving the idea of the soft eggs on top. You are surprised by that, right? I made potato pancakes last year and we really liked them. I need to make them again now!

DeleteMy mother would always make these with left over mashed potatoes. They are on my list to make next time I have left overs. I always add a little onion - love the egg on top!
