I had this same meal as a full sandwich the other day and wanted to make it again for Bev to try, but I went with open faced to save a few calories. I sautéed a little onion, added a patty of my homemade breakfast sausage and chopped it up. Then added three eggs beaten with a little cream, about two strips of crumbled crispy bacon and scrambled. In the meantime, I topped the bread with some smoked Gouda and nuked for a minute to warm it a little – toaster oven would have been better. Finally, spread a little mayo on the cheese, added the eggs and a little chopped chives – except I got the eggs done early and didn’t want to overcook them. I added them directly to the cheese and forgot the mayo, so I smeared a little atop the eggs.
Absolutely outstanding again, even with the mayo in a different place – Bev said “you're right this is good.”

Well this is a hearty breakfast my husband is asking why I don't make this right now! I will have to go out and buy the ingredients! thanks for the recipe so much for relaxing this weekend lol .....

ReplyDeleteLooks like a great breakfast sandwich Larry. One of my favorite quick breakfasts is a toasted English muffin, mayo and a fried egg. ok, I'm officially hungry and still dreaming about ice cream melting into that pecan roll. I don't think I'll ever be the same after reading that.
