Cindy And I Eat Plenty Of Seafood - Part 1 - Lots Of Pics

As mentioned in the last post, Bev is gone so Cindy and I are having our twice/year seafood-a-thon and it began with the Greek Salmon in the previous post.  We had 1½ lbs. of fish left over and she turned them into Salmon patties using the recipe from “Natasha’s Kitchen”  while we had mid-March snow showers when a cold front went through.





The cakes were very good and of course I had them reheated with cheese and topped with eggs for a breakfast of salmon cakes ala Larry and they were even better.

Next up was some baked tilapia that Cindy wanted to get out of the freezer and she used the recipe from 101 Cooking ForTwo.  Here are he before and after cooking pics.



To go with it she made a salad and to use up a very ripe avocado she made delicious Creamy Avocado Lime Ranch Dressing using the recipe from the "Ask Chef Dennis" blog  which can be found by clicking on the link.
