We hadn’t seen Eliza and family for a few weeks and I have been wanting to cook some steaks (my needed extra protein) so we invited her to bring her family and come on down for Sunday supper. Her she is at eight with her wide blond hair.
I wanted to cook special meat so I by-passed the regular meat counter and went to the one that has more special steaks.
They were thicker (1¾”-2”) than I wanted so after trimming, I pounded them pretty hard with the Jaccard on the day before to get them the same thickness (1¼“) go they would cook faster and more together. Those are some big-a** strips and rib eyes and I'll them special cut me some a little thinner next time.
On cooking day, I added Montreal Steak Seasoning for a six-hour dry marinade then brushed on a coat of peanut oil prior to cooking.
For steaks this thick I opted to use the reverse sear method and used the 200F oven to get them to them right temp for each diner prior to searing – 115F for med-rare and 125F for more medium. It took one hour for them to go from 63F to 115F and 125F for the filets.
Any that came out of the oven early were wrapped and kept in a pre-warmed cooler until the others were done then all were seared for two minutes per side on a very hot grill to build a crust – using reverse sear and only a brief time on the grill, resting for juice redistribution is not required.
The steaks were delicious (and protein rich) and we served them with sauteed mushrooms, baked potatoes and salad (along with my marinated olives which nearly everyone added to theirs). This is my plate prior to the mushrooms and the piece on top is what I ate most of
I ate a little salad, half a potato and a third of my steak (except for the little piece) and I was stuffed – unbelievable how effective the Zepbound is at limiting my appetite - and this is what was left.

And to keep the protein coming, I had steak leftovers for
breakfast with a couple of scrambled eggs with creamy white cheddar cheese.
WVU Baseball
You likely know this, but I’m a proud alumni of the state
of West Virginia and WVU but it’s often hard being one of their sports fans. While I’m used to seeing good baseball and
softball teams from UT, it’s really unusual for WVU except for this year as the
baseball team won their two out of three game super-regional against Cal-Poly
by scores of 12-2 and 17-1 and they are going to the college world series for
the first time in program history - GO EERS.
