Baked Steak in Brown Gravy, German Christmas Sausage, and Mexican Out

Whether you call it baked steak, country steak, or steak and gravy, it’s beef comfort food at it’s best especially when served with mashed potatoes and it was a good meal for Pat on her first day home.  She had a knee replaced on Apr 27th and after a few days in the hospital, she went to a step-down unit until May 8.  She has been doing very well and in much less pain than I was. 

Rather than buying cubed steak with its potential gristle, I bought a couple of round steak eyes and made sure they were well trimmed before slicing into ¾“ steaks.


I seasoned both sides with S&P then I used the Jaccard to tenderize and pound them to a ½” thickness.

I dredged them in flour and fried until browned on both sides.

I added them to the roasting pan, poured in the gravy, covered with foil and baked for two hours at 350F. 


Then baked them an additional 30 minutes uncovered.

Brown Beef Gravy

Rather than our go-to onion gravy, I made just beef gravy in the meat frying pan by using the same recipe, omitting the onions, and adding ½ tsp of Accent.

Potatoes

Since the potatoes were to be topped with the flavorful gravy, I just made a very basic version and after boiling and draining, I hand mashed them in the cooking pan with melted butter, warm milk, Lawry’s Seasoning salt, pepper, and additional salt as needed.

German Christmas Sausage

While freezer diving recently, I came across a package of German Christmas Sausage that I had meant to eat at Christmas but forgot.  The sausage came from the Wurst Kitchen Sausage Company and they say that it has “All the Flavors of the Christmas Season!”  So, since I missed Christmas and wanted to get them out of the freezer, I decided to cook it up to have for breakfast with scrambled eggs.




They were very good but did have some unusual sausage spices in it but I couldn’t identify them for sure but maybe similar to pumpkin pie spices.

Mexican Out

Bev and I went out for Mexican recently at our local Cielto Lindo Mexican Restaurant and as always, we ordered extra to ensued leftovers.  This is Bev's with a taco, burrito, enchilada, tamale, tostada, and beans and rice.


I had three steak and chorizo tacos with rice and charro beans (I like my Charros much better).


As usual, everything was very good and we washed it all down with 20oz margaritas.
