Italian Pan fried Halibut with Creamy Lemon Caper Sauce Then Greek Sausage

I had some halibut in the freezer that I wanted to use and after searching my blog, I found a recipe that we had made previously but I didn’t have the sauce ingredients so I adapted my normal lemon, butter sauce for this dish.

Italian Pan fried Halibut with Creamy Lemon Caper Sauce

Ingredients:

Extra Virgin Olive Oil

3 T. capers

8 T. butter

2 cloves garlic, finely minced

3 T. lemon juice

½ C. heavy cream

4 pieces halibut, about 1″ thick (from Sitka Seafood Market) https://sitkaseafoodmarket.com/

½ cup Italian-seasoned bread crumbs

½ cup Romano-seasoned panko crumbs

Instructions: 

1. Slowly heat all of the sauce ingredients in a saucepan.

2. Place on a very low simmer to keep the sauce warm while cooking the halibut.

3. Drizzle each halibut piece with olive oil and spread the oil evenly over both sides.

4. Using a shallow mid-size bowl, mix the Italian seasoned bread crumbs and panko crumbs.

5. Place each oiled halibut piece onto the bread crumbs and then turn over, making sure that the fish pieces are covered on both sides.

6. Get the pan heated and add enough oil to cover the bottom well.

7. Cook the pieces on medium heat for about 3 minutes on the first side, flip and cook to an internal temperature of 125F or it flakes easily.

Plate the fish and top with sauce then we sided with green beans and cucumber salad (7/4 post)

The Verdict:

The beans and cucumber salad were good as expected and the fish was delicious.  Bev commented that this was the first time in a while that she ate all of her fish.  I got it cooked to a moist and flakey state and both the breading and the sauce worked well together – neighbor Pat said it was melt in her mouth – I think I’ve finally learned how not to overcook it.

The next day we had some Greek Sausage from our favorite, The Wurst Kitchen, along with sauteed peppers and onions and to Greek it up a little more, I added crumbled Feta to mine - it was very good.


We need to enjoy our remaining sausages as our kids have moved from the area so we won't have a reason to be up in Aurora, IL to buy more.
