Totally Delicious Lemon Garlic Butter Flounder And Asparagus

After a three-day battle with Norovirus and 14 lb. weight loss, on the fifth day, I decided I was ready to try something to eat other than boiled potatoes and my choice was a nice piece of flounder from the freezer along with some fresh asparagus.  To make it a one pot meal and cook one of our favorite fish dishes, I decided to cook everything in lemon butter garlic sauce.


Lemon Garlic Butter Flounder And Asparagus

Ingredients:

Large flounder filet

3 tbsp butter

2 tsp lemon juice

1 tsp minced garlic

S&P

Small bunch of asparagus

Directions:

Cut the asparagus into bite sized pieces.

Season the fish with S&P.

Add the butter to a large non-stick skillet over medium heat.

Add the fish seasoned side down and cook until lightly browned.

Flip the fish and add the asparagus alongside it.

Remove the fish to a plate and cover to keep warm.

Add the lemon juice and garlic and cook until asparagus is done.

My plan was to nestle the fish back into the pan cook for about 30 seconds then flip but it was too delicate so I topped with all of the asparagus to get the sauce on it.


The Verdict:

It was totally delicious and I got the flounder cooked just right as it was moist and fall apart tender.  It worked very well with the asparagus and while I intended to only eat half of the fish it was so good that I ate it all.  I have more flounder so I would appreciate your sending me your favorite recipe for it or mild white fish in general.

  1. I don't think I've ever had flounder. Your healthy meal looks really good. I simply don't want to get norovirus. I know several people who have had it and it sounds awful.
