Bev came home from the store recently with three pork steaks and wanted them grilled with BBQ sauce. I had never heard of a pork steak until our midwestern friends Laurie and David (Big Daddy Dave) served them to us. In reality, they are sliced pork shoulder or Boston butt. I decided to brine them first and found a recipe on Best Recipe Box and decided to use it but not their grilling instructions so they are mine.
Grilled Pork Steak -
The Ingredients:
3 large pork shoulder steaks ,(aka pork butt steaks) sliced
1/2" thick
1/4 cup (60 ml) oil
4 large cloves garlic, minced
3 Tablespoons (45 ml) soy sauce
1/2 teaspoon (2.5 ml) onion powder
1 Tablespoon (15 ml) brown sugar
1/2 teaspoon (2.5 ml) kosher salt
1/2 teaspoon (2.5 ml) fresh cracked black pepper
Sweet Baby Rays BBQ Sauce
The Instructions:
1. In bowl combine oil, garlic, soy sauce, onion powder, brown
sugar, salt and black pepper. Add pork steaks and coat them evenly in the
marinade.
2. Cover the bowl and marinate pork for at least 30 minutes or
up to overnight. I marinated them for 10 hours.
3. Pre-heat grill on medium heat and clean grates.
4. Add steaks to grill and cook for two minutes then flip and
brush top with BBQ sauce.
5. Cook two minutes, flip and brush with BBQ sauce. Repeat until each side has two coats of sauce. May need to cook longer or flip again for thicker steaks.
6. Remove at desired internal temp and serve.
We sided it with salad.
The Verdict:
It turned out tender and delicious and since it has plenty
of fat (like beef chuck) it has a wide range of acceptable levels of
doneness. Next time I’ll cook them
hotter to get a little caramelization.

ReplyDeleteHi Larry, Thanks for the mention... We've never brined our pork steaks but I think that I'll give it a try. I usually use Worchester Sauce, garlic powder, onion powder, coarse ground pepper and a BBQ seasoning and then let them sit for 3 or 4 hours. I slather on the BBQ sauce just before they're done...and caramelization is key. I usually use Famous Dave's Rich and Sassy on the grill...but, as you might expect, I use Famous Dave's Devil's Spit while eating my pork steak. Love a good pork steak! Take Care, Big Daddy Dave

ReplyDeleteYears ago, our friend Greg from Missouri introduced us to pork steaks. He grilled them with BBQ Sauce. You simply can't find them here, so I've sliced them myself from a pork roast. Its amazing how well they grill ... and end up tender.

ReplyDeleteThat is one of our secrets of brining pork. We go to the local Wally World and buy CHEAP double cut pork chops. We brine for a couple of hours and they taste like a million dollars.
