Continuing
with my weight-loss, low-carb, Blue Zone, and around-the-world meals, I made up a pot of Greek Lentil
Soup using the recipe from Sarah and Tim on their Curious Cuisiniere blog as it
seemed to have the right stuff in it. Since
I had 2 cups of lentils, I adjusted their recipe to get the one below with a couple of other revisions. Check
out their blog for the original recipe and more shots like this.
Greek
Lentil Soup – Adapted from Curious Cuisiniere
255 calories/cup for original recipe.
Ingredients:
3 Tbsp
olive oil, divided
1 softball
sized onion, diced small
4
carrots, diced small
3
celery stalks, diced small
3
garlic cloves, minced
2 c
green lentils, dry
1½
cups diced tomatoes, un-drained
5 c
vegetable stock (Larry used chicken stock)
2½ c
water (1/2 cup at a time to get desired amount of broth, 2 c for me))
3 tsp
dried parsley, chopped
4 bay
leaves
4 tsp dried
oregano (increased by Larry)
2 tsp
dried basil (added by Larry)
½ tsp
salt, rounded
1/3
tsp ground black pepper
2 Tbsp
red wine vinegar
Toppings
(optional)
¼ c
plain yogurt
1 tsp
lemon juice – Larry added a little to his bowl
Feta
cheese
Kalamata
olives
Instructions:
1. In a soup pot, heat 1 tsp olive oil over medium heat. Add onions, carrots,
celery, and garlic and saute for 5 minutes, until onions are translucent.
2. Add
dried lentils, tomatoes, stock, water (as needed), parsley, bay, oregano, salt, pepper, and
the remaining olive oil. Simmer, covered for 45 minutes. Taste and adjust seasonings.
3. Just
before serving, stir in the red wine vinegar to taste.
Larry
made it the day before so the flavors could marry overnight in the fridge then added some feta and olives after reheating. Cindy and I both thought it was very good and
as expected, Bev didn’t like it but she has never liked lentil soup. If you like lentil soup, I recommend this one but if you're like Bev no matter how good it taste, you still have to like lentils.
