Dinner For My Valentine


Bev was in Gatlinburg at our time share with her sister on Valentine’s Day and when she came home the next night we had a meal of sautéed scallops, prosciutto wrapped filet mignon, and Spinach Maria (from the freezer).

The nice sea scallops were given a light coating of oil then Emeril’s Essence and grilled while being basted with melted butter.  The steaks got a coating of oil and Montreal Steak Seasoning and were wrapped in Benton’s prosciutto which I’d soaked a little to remove some of the salt and soften it a bit.

The scallops came out just right and I nailed the steak cooking (Thermapen wins again) but will stick with bacon when wrapping in the future.  We all preferred the bacon flavor (no brainer for me as it’s my favorite meat on the planet) and the prosciutto was too dry to be wrapped without breaking – but it was worth a try.  We washed it all down with a bottle of good red wine and called it a successful valentine’s date.

  3. We had scallops for Valentines Day also. No steak darnit. We had been eating so rich the days before, we decided to keep it lighter. Have you blogged about the spinach? I'll have to do a search. My digital thermometer broke at the end of grilling season, I have to get a new one. You must recommend the thermopen? Great looking meal Larry.

  4. I haven been craving scallops and can't wait until it's warm enough to sit on the deck with a bottle of wine and seafood and steaks on the grill. Very nice dinner! The spinach looks good too :)

  9. Fabulous Valentine's Dinner. I'd LOVE it. As does George, as much as I love steak, my fav would be those big scallops... YUM.

  10. Valentine's Day is good no matter what the actual date of the celebration is! I actually love the little tiny scallops, lightly sauteed. But steak wrapped in bacon? That might just be the best idea ever.

  11. That's what I call a proper Valentine's Day dinner! I don't recall seeing your spinach recipe before and can't wait to try it. It looks alike a perfect side for a steak (I prefer a bacon wrap too).
