Using The Smoked Pork And Chicken – Quesadillas And Breakfast Burritos

The grandkids had requested BBQ during their visit so I fired up the smoker and cooked a pork butt, two racks of spare ribs, chicken thighs, and wings.  We ate the ribs and wings for supper then I used the pulled pork and chicken thighs for Hispanic dishes.

Following an eleven hour visit to Dollywood, the kids didn’t get up until afternoon the next day and it was just a lay around day for them so I made a simple meal of quesadillas for supper using the smoked meat.

Pulled Pork And Chicken Quesadillas

8” Flour tortillas

Smoked pulled pork, warmed

Smoked chicken thighs, cubed, warmed

Onions, chopped

Jalapenos, sliced

Shredded cheddar cheese

Salsa – red and green, from Cielto Lindo Mexican Restaurant 

Directions:

Melt some butter on a griddle or in a pan and add the tortilla to it.

Put cheese on one half of the tortilla and meat on the other half.

Add the onion and jalapenos atop the meat.

When the tortilla is golden brown, fold the cheese half over the meat half.

Plate and top with salsa - my plate with both salsas.

Pulled Pork And Chicken Breakfast Burritos

My plan was to make breakfast burritos but I only had 6” tortillas and didn’t want to make a store run so I decided to make an open-faced breakfast burrito which is similar to a tostada and egg rancheros but with the burrito ingredients.  I thought I might have invented something until I found recipes for open faced burritos on line.

Open Faced Breakfast Burritos

Ingredients:

Flour tortillas, warmed on a griddle

Refried beans, warmed

Smoked pulled pork, warmed

Smoked chicken thighs, cubed, warmed

Onions, chopped

Pickled Jalapenos, sliced

Eggs

Shredded cheddar cheese

Salsa – red or green

Directions:

Scramble the eggs with plenty of cheese.

Add a smear of beans to the top of the tortilla while it warms on the griddle.

Top with the warmed meat, onions and jalapenos.

Add sauce of choice.

Top with the cheesy scrambled eggs and the onions I forgot earlier.

The Verdict:

We all thought both meals were delicious and they were similar except for the refried beans and eggs on the burritos.  I put a lot of meat on both dishes so one of each was plenty for everyone.
