Bev saw this recipe on line from All Recipes and as lovers of both baked burritos and chili dogs we knew it was a must try. I grew up in an area of the country where a hot dog was a wiener in a bun and topped with sauce (special hot dog chili), mustard, and onion and if you ordered a dog with everything this is what you got, but in the spirit of broadening my horizons, I was willing to use chili with beans in the casserole.
As it turned out we had
everything we needed on hand with a bag of homemade chili and some type of
special wieners (bison we think) in the freezer, and the tortillas, onion, and
cheese in the fridge.
After reading the comments by
others, we adapted the recipe to get the following.
Chili Dog Casserole – Adapted
from All Recipes
The Ingredients: - Original
recipe yields 10 servings
1 qt homemade chili (or 2 cans
chili with beans)
16 ounce package long beef
frankfurters, or your favorite wieners
10 (8 inch) flour tortillas
16 oz shredded cheddar cheese,
divided
Mustard, your favorite
Chopped onion to taste
Crushed potato or corn chips
(optional)
Note: By adding cheese and onion inside the
tortillas with the wieners, they were large enough that I could only fit eight
inside our 9”x13” dish.
The Directions:
Preheat oven to 425 degrees F
(220 degrees C).
Spread half the chili in the
bottom of a 9x13 inch baking dish.
Place a frank on a tortilla,
add mustard, onion, and shredded cheese to taste, roll up franks inside
tortillas and place in baking dish, seam side down, on top of chili 'bed'.
Top with remaining chili, and
sprinkle with remaining (at least 8 oz.) cheese.
Cover baking dish with
aluminum foil, and bake at 425 degrees F (220 degrees C) for 30 minutes.
Remove foil, top with chips (Larry
forgot this) and serve. Sorry about the next shot.
The Verdict:
As chili dog fans, we all loved
it and would definitely make it again.
Why not just make hot dogs you ask?
While it had all of the same ingredients, it tasted different enough to
make the casserole plus it can be made ahead of time and baked during happy
hour.
