Potato Cakes For Breakfast


For the country rib supper, I made plenty of mashed potatoes for leftovers, especially to use for breakfast.  I didn’t mix in anything else and just formed them into patties and fried in a butter & oil mixture.

Then came the unique part of this meal - two over easy eggs on top.

It was a delicious and these potatoes made excellent potato cakes.

  1. Mmmmm. That sounds delicious. My mom used to make us potato cakes. I add a few more ingredients than she did but they are still delicious! I love the egg on top!!

  2. We don't eat potatoes often, but when we do we save some for this exact same purpose. A very fine breakfast.

  4. YAY! The breakfast king is back! :) Love making potato cakes and I, of course, love the idea of putting eggs on top! Going to have to make mashed potatoes soon just to make this!

  5. Larry, This is the way I like my potato cakes! Fried with a bit of pepper and salt...then topped with easy over eggs and Tabasco. The only problem is that my potato cakes never really firm up quite enough to be called 'cakes'. Great breakfast! Take Care, Big Daddy Dave

  7. Like hashed browns, only easier to eat. You are the king of eggs; you almost need to buy them by the case, like I do. Almost.

  8. Ummm, mmmm! It looks great, Larry! I love potato cakes and could eat them any time of the day. I usually mix in a couple of eggs with the potatoes before frying. Next time will be your way! Just wondering, is there anything you don't like with eggs on top? :-)

  10. These look great. I am loving the idea of the soft eggs on top. You are surprised by that, right? I made potato pancakes last year and we really liked them. I need to make them again now!

  11. My mother would always make these with left over mashed potatoes. They are on my list to make next time I have left overs. I always add a little onion - love the egg on top!

  12. Oh Larry... this took me back to my childhood. I mom used to make the mashed potato patties when I was a kid. I love that you put perfectly cooked eggs on top - YUM!

  13. I have to make some mashed potatoes just for this, since we never have leftovers with the two boys. Thought of you last weekend when I made egg topped tostadas for breakfast, I thought to myself, "Larry would approve!"
