Semi-Homemade Corned Beef Hash - Sorta

I’ve failed miserably in my plan to run a taste test on homemade vs. frozen hash browns, but Bev is already convinced the home made ones aren’t worth the extra effort - I'm not.  I’ll use as my excuse that I’m waiting for Lea Ann from Mangos, Chili and Z to perfect the homemade version.

In the meantime, Bev had a hankering for corned beef hash and went the semi-homemade route by using Ore Ida potatoes and deli corned beef.  However, she had way more potatoes than meat, so this was more hash browns with corned beef and onions.

But hey, hash browns, corned beef, onions and topped with a couple of over easy – you know it had to be good.

  1. I've tried homemade hash browns before and couldn't get them spot on either.. I'll be interested to see if you do find that perfect recipe! I wish I had that plate of eggs and hash right now, I'd dunk my toast or english muffin in that yolk... mmmmmmm!!!!

  2. That corned beef hash sounds so good! Those eggs look perfect. I've got one more idea up my sleeve for home made hashbrowns, and then I'm with Bev...it's back to the freezer section. :)

  5. That sounds good Larry. I always end up mixing my eggs and hash browns anyway, even when they didn't start that way.

  6. All I can say is that I'll take hash browns any way that I can get them, including frozen when desparate! I could eat any potato cooked any way at any time! It's my complete weakness!
