Mediterranean Salmon and Asparagus - Both Delicious

It’s Sockeye Salmon season in Alaska and once again our local Food City had them on sale for $9.99/lb. so we stocked up for the freezer and kept one out to eat along with another variety that we had in the freezer.   I cooked them along with some asparagus for a side dish.  The sockeye is the much redder filet and was never frozen.


For the fish, I used a favorite Greek Salmon recipe which has a topping containing olives, tomatoes, cucumber, onions and feta - click on the link for the recipe.

For the asparagus, I used the recipe for Lemon, Garlic Asparagus from the “Café Delights” blog where it is described this way – “Lemon Garlic Asparagus topped feta cheese, tomatoes and drizzled with Mediterranean flavors makes the perfect side dish.”

Lemon Garlic Asparagus

Ingredients:

4 tablespoons olive oil

2 tablespoons lemon juice fresh squeezed

1 tablespoon red wine vinegar

1 tablespoon fresh parsley chopped

1 teaspoon dried oregano

2 teaspoons garlic minced

1 teaspoon salt

1 pinch cracked pepper to taste

1 pound asparagus spears woody ends removed

To Serve:

½ cup grape tomatoes halved (optional)

½ cup feta cheese crumbled

Instructions:

The asparagus can be roasted, grilled, or sauteed but I choose to steam it.

Whisk together oil, juice, vinegar, herbs, garlic, salt and pepper

Steam asparagus for 8-10 minutes or until it is crisp tender.

Add the asparagus to a bread pan, pour in the dressing and toss to coat.

Plate and top asparagus with feta cheese and tomatoes (optional).


The Verdict:

We all thought the meal was outstanding but we knew the salmon would be.  This was a first for the asparagus recipe but it will not be the last and I’m confident it would be equally good with other cooking methods.  I think the key was to dunk it after cooking to give it a good coating of the sauce and if you don’t like feta, Parmesan would likely also work.
