Chicken And Dumplings For The Grandkids – A Better Cooking Method

We recently had a long-weekend visit from grandkids, Reese and Riley Walker, and three of their friends and Bev likes to make dishes that she knows they really like such as chicken and dumplings for college girl Riley.  The dish had a great flavor but the chicken stuck to the pan bottom while the dumplings were cooking and since she had enough broth and chicken for another batch, we decided on a different cooking method for round two. 

Since she couldn’t find the recipe from round one, for these dumplings, she used the recipe for Old Fashioned Chicken and Dumplings from “The Stay At Home Chef” blog.

Drop Dumplings

Ingredients:

2 cups all-purpose flour

3 teaspoons baking powder

1 teaspoon salt

1 cup buttermilk

Instructions:

1. Make the dumplings by whisking together flour, baking powder and salt in a mixing bowl.

2. Slowly pour in buttermilk and stir to combine.

3. Drop by the spoonful directly into the thickened soup.

4. Cover and let simmer 20 minutes.

I’ve said many times that I like to watch Diners Drive-ins and Dives to get recipe and technique ideas and I’ve seen restaurants do chicken and dumplings a couple of times using the following method.

Warm the chicken in the broth then remove it to a bowl and keep warm in a 160F oven.

Thicken the broth and cook the dumplings.

Add a portion of the warm chicken to a serving dish, add dumplings and gravy, and serve.

The Verdict:

Just as with round one, the flavor was delicious, the dumpling recipe was a winner, and the cooking and serving method worked perfectly.
