Redneck Tacos (Pulled Pork + Hoecakes)

I’d seen this while watching a TV food show where they feature a food type, a city, or a restaurant, and one of the dishes was Redneck Tacos from a restaurant in Nashville, TN.  So, I added it to my make-someday-list for the next time I cooked pulled pork which came about this past week


There was no recipe from the show so I checked out the web and found Shelia's recipe at Life Loving Good Food and only used the hoecake recipe shown below which I slightly adapted.  I used my pulled pork and Bev made her normal slaw.

Redneck Tacos

The Ingredients:

1 cup self-rising flour

1 cup self-rising cornmeal

tablespoon granulated sugar  (note)

2 eggs, beaten

3/4 cup buttermilk

1/3 cup water - more as needed to thin the batter

1/4 cup vegetable oil

Pulled pork or chicken

Your favorite barbecue sauce

Your favorite slaw

Note - Some parts of the country put sugar in their cornbread and other parts do not and I am a "do not."  My name for sweet cornbread is "cake."

The Directions:

1. Heat non-stick griddle to 350 degrees.

2. Add flour, cornmeal, and sugar to a large bowl. In a smaller bowl, combine eggs, buttermilk, water, and oil. Add to the dry ingredients and stir until well combined.

3. Drop mixture 3 tablespoons 1/3 cup at a time onto hot griddle. Cook until bubbly and brown; turn and brown on other side. *May also fry in a skillet with a little oil or butter.


4. Place a hoecake on plate. Pile high with pulled pork and drizzle with barbecue sauce.


5. Add coleslaw on top and drizzle with more barbecue sauce, if desired. Serve immediately.


The Verdict:

We all thought they were very good and a unique concept, but with the strong flavors of the pork, sauce, and slaw, it was hard to tell the hoe cake was under there so we’ll not bother with them for the future.

  1. Larry, The smoked pork butt looks great as usual! As for the hoecake, looks like a cornmeal pancake to me and I'd just have that with butter and maple syrup. I agree that the hoecakes would get lost with quality pulled pork and especially with my spicy hot BBQ sauce. Stay Safe and Take Care, Dave

  2. I like the concept but I am a lover of crunchy tacos so I'm thinking I would miss the crunch. They do look mighty tasty though!

  3. I smoked a butt this week and have it pulled and ready for dinner tonight. This seals the deal about how to serve it! And I agree about "cake". Sugar in cornbread is probably a venial sin.

  5. Oh, man, have to make some hoecakes soon, no sugar! Yours look perfect! I can see how they took a backseat with the pork and all. I love love pulled pork, but the big meat eater Bill is, he just doesn't like pulled pork, and I don't get it. Wish I had a big helping off the plate above, yum!
