A Few More Random Meals & Events

I sure wish I had more to write about than food, such as RV travels, but we’re just not ready to risk much yet – we are thinking about a short fairly local trip though.

A while back, I posted about my first brisket on the grill and I advised that the meat was a little overcooked but I did find a couple of ways to eat it that were very good.  One of those, which won’t surprise you, is breakfast food achieved by turning it into hash with the addition of onion, green pepper, and par-boiled potatoes.  Topped with a couple of sunny side up eggs, it was very good.

A second meal was garlic lime shrimp tacos using the recipe fromDelish and while we enjoyed them, we prefer using fried shrimp and our taco normal recipe.  

Bev and I had both been wanting to make King Ranch Chicken for some time and decided it would work well as the Thursday night meal for our friends so we whipped up two casseroles using the recipe from House Of Yumm.

We all thought the flavor was very good and would like to have it again but since it was way too runny, I’ll look for a different recipe.

This past Saturday, Eliza brought her mom and dad down for a visit and low country boil on the dock.  She has been enjoying her new kiddy pool at home this summer and finds she loves the water.  As a result she kept asking to go in the lake and as grandpop, I had to oblige and provide her first dunk in the lake, which we both thoroughly enjoyed.

The top shot below was the supper then a delicious breakfast from leftovers a couple of days later with a potato, sausage, shrimp and a couple of beaten eggs.

  2. You make the BEST breakfasts!! Glad you've been able to spend time with family. I've always wanted to try King Ranch Chicken--thanks for the reminder.

  3. Hi There, We've done a couple of small trips and haven't had any trouble with the Covid restrictions... People that we see while on vacation seem to be willing to do a better job of being careful and following the rules to stay healthy, than people right here at home. We don't venture out much around here... We do go to the Grocery Store --but go very early in the mornings to stay away from the crowds. Even though both Kroger's and Walmart SAY to wear a mask, many people still don't.....

    Your meals made me hungry. You need to publish a Breakfast Meal Book with all of the different ways you can make a creative breakfast, many of which are from left-overs...

    I'm going to grab the recipe for the King Ranch Chicken. Thanks.

  5. The country boil looks yummy. I may have to put that on this weeks menu. As much as you'd love to get the RV out, it's probably best to just sit tight and ride this thing out at home. We're doing very little ourselves this summer and focusing on RV maintenance projects.
